In my mission towards becoming more of a kitchen powerhouse, I’m dedicated to trying new things and perfecting recipes from the past. Dishes that I wouldn’t really try normally, to challenge myself. On yesterday’s menu were three ingredients I had never worked with before. Sweet potato, puff pastry and fresh jalapenos. The result was a savoury sheet cake that made the house smell mouthwateringly good and which made Sander and I eat 4 persons worth of food.
But boy oh boy was it worth it. If you’re of the vegatarian persuasion, or just cutting back on your meat intake, you can completely skip the adding of the minced meat. Curious to find out how you too can make this delicious and easy savoury sheet cake? Read on for the recipe below!
Savoury sheet cake recipe
WITH SWEET POTATO AND GOAT CHEESE
I N G R E D I E N T S
500 gr. Sweet potato | Peeled and sliced into thin slices
125 gr. goat cheese blanc 50+ | Crumbled
A roll of fresh puff pastry dough | Rolled flat onto a baking tray lined with parchment paper
1 jalapeno | Sliced into thin slices
A jar of sun dried tomatoes in olive oil
1 tsp. dried cilantro
1 tsp. dried oregano
100 gr. of half/half minced meat seasoned to taste (opt)
I N S T R U C T I O N S
Preheat your oven to 200 degrees Celsius/392 Fahrenheit. Strain the sun dried tomatoes but make sure to catch the oil that comes off. Take two tablespoons of the remaining oil and mix with the cilantro, oregano and some salt and pepper. Mix in with the sweet potatoes making sure all the slices are coated.
On your baking tray lined with parchment paper, spread out the puff pastry evenly. If you can’t get your hands on fresh, you can use the kind from the freezer as well. Allow to thaw for about ten minutes before putting the squares of pastry dough on the baking tray.
Put the slices of sweet potato all over the baking tray, making sure they overlap. Crumble the entire goat cheese over the baking tray. It may seem like a lot, but it gets smaller in the oven. Plus, more cheese is always a good idea. Then put as many sun dried tomatoes over the tray as you like, I really like the taste of these, so we used a lot..
Top off with the minced meat, again this is optional. Now revel in the gorgeous colorful display in front of you. If you like you could beat an egg and put it on the edges of your sheet cake, this wil make sure the edges become a bit more brown when you’re baking it. Slide the baking tray into the oven and let it sit for about twenty minutes. When it comes out of the oven, throw the jalapeno over the baking tray.
Wasn’t that incredibly easy? The best part of cooking is always the part where you get to taste your creation. Slice into squares, or strips, whichever you prefer. You could top it off with some fresh cilantro, but I really can’t appreciate that taste. What I appreciate about this recipe is that it’s not too difficult to put together, but it did open me up to try some ingredients that I hadn’t used before. I really like the taste of sweet potato and kind of want to make some more things using this ingredient.
